Pumpkin Bars 🎃
Aiden had fun making these pumpkin bars. He sure enjoyed pouring the flour mixture into the mixer and watching the flour go everywhere. (As you can tell from the picture below.) I think his favorite part was eating them though. Honestly it is probably everyone's favorite part of any dessert!
Pumpkin Bars
3 cups flour
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
2 sticks butter (melted)
1 1/3 cups brown sugar (packed)
2 eggs
2 teaspoons vanilla
2 cups pumpkin (1 can)
Preheat oven 350°F.
Line 13x9 pan with parchment paper or foil. In bowl combine flour, cinnamon, ginger, nutmeg, baking soda, and salt. In different bowl mix butter, brown sugar, egg, pumpkin, and vanilla. Add dry ingredients to wet. Mix well. Put in pan. Bake 25 minutes. Cool completely before frosting.
Frosting
2 sticks butter
1/2 cups brown sugar
1 teaspoon cinnamon
3 cups powdered sugar
1 teaspoon vanilla
1 teaspoon salt
2 tablespoons milk (plus more if needed)
In large bowl beat butter and brown sugar until smooth and fluffy.
Add cinnamon and salt. Add powdered sugar gradually until all combined. Add vanilla and milk. Beat until fluffy. If too thick add more milk and more powdered sugar if too runny.
Keep in fridge for up to 5 days or 1 day on counter.
